Ingredients and production process of egg tarts:(for reference only):
Egg tarts' ingredients:
1,Egg tart shell's water shell part:
1000g flour, 90g sugar, 80g liquid cream, 2 eggs, 450g water
2,Egg tart shell with the oily core:
1600g lard, 400g non-shortening, 500g high-gluten flour, 500g low-gluten flour
3,Egg liquid part:
A: 770g water, 450g sugar
B: 50g pure fresh milk and 10g bivets powder
C: 50g yolk, 450g whole egg
D: biwei milk milk 3g, a few drops of vinegar
Egg tarts' production process:
First, whisk the dough until smooth and refrigerate a little.
Second, fold the oil core and freeze until soft and firm.
Third, use water skin to make a heart, and then open the pastry with oil cover. The number of times of opening is 3 x 4 x 4 fold. Each time the shortening is slightly frozen for 20 minutes.
Baking time: about 15 minutes
